Garlic, vinegar and lemon salad dressing

I make this salad dressing and use it over a few weeks*. I keep it in a jar and store in a cool dark place. *This recipe contains fresh garlic, so botulism is a risk – google it and decide if you want to live dangerously.

For one salad, make 1/3 or 1/4 or quarter of the mix.

Ingredients

  • 3 garlic cloves, minced (more if you like garlic!)
  • 1 cup of extra virgin olive oil
  • 3/4 cup of apple cider vinegar
  • 6 Tbsp of fresh lemon juice
  • 3 Tbsp honey
  • 1 1/2 tsp of salt
  • pepper to taste.

Method

  1. Put all the dressing ingredients in a pot. Heat the mixture on low until the honey melts and the ingredients easily combine. Beat with a whisk.

  2. Decant into a jar.
  3. Shake the jar to combine ingredients before using.
